Macadamia buns

150g Macadamia flour (partially de-oiled)
45g Psyllium husks
10g Baking powder (gluten free)
12g Apple cider vinegar
90g Egg whites
230ml Water (hot)
8g Olive oil
2g Salt
10g Topping of your choice (sesame, chia,...)
Preparation
1. Mix the macadamia flour, psyllium husk, baking powder and salt.
2. Add the water, olive oil, egg white and apple cider vinegar and mix with a whisk or large spoon. Do not knead the dough. It should just hold together. If you stir for too long, it will deflate.
3. Lightly wet your hands and form the dough into about 6 buns of the same size and place them on a baking sheet.
4. Sprinkle the buns with your favorite topping and bake for about 55 minutes at 170°C (ventilated oven).
