Macadamia Waffles

2 eggs
60g cream cheese
50g macadamia flour
1 teaspoon baking powder
15g of erythritol (or sweetener of your choice)
(Optional: 1/4 teaspoon of vanilla extract)
Topping: powdered erythritol, berries...
Preparation
1. Put all the ingredients for the wafer batter in a large bowl and mix with a hand mixer until a homogeneous dough is obtained. Let rest the batter for about 10 min.
(Important, otherwise the waffles will not be so fluffy!).
2. Preheat your waffle iron and grease it with a little coconut oil. In a mini round waffle iron, you will need about 1.5 tablespoons of batter per waffle. If you use
a different waffle iron, simply adjust the amount of waffle batter. Bake the waffles for about 2-3 minutes and repeat the process until the batter is used up.
3. Enjoy your waffles hot or cold with a sprinkle of powdered erythritol, fresh berries or even unsweetened dark chocolate. Simply a wonderful snack and
healthy!
